Avocado Cheesecake

bullet1 9" graham cracker crumb crust, baked
bullet1 lb avocados, soft-peel and remove seed
bullet1/2 c. sour cream
bullet8 oz cream cheese
bullet1 (3.75 oz) pkg. instant lemon pudding
bulletsalt to taste
bulletgraham cracker crumbs

Mash avocados and add remaining ingredients.  Beat until smooth.  Spoon mixture into baked graham cracker crust & sprinkle with graham cracker crumbs.  Refrigerate several hours.  6-8 servings.
