Coconut Guff

  • 3 c. coconut, peeled & grated
  • 3 c. sugar
  • 1 1/2 tsp. vanilla
  • 1 c. milk
  • 4 c. flour
  • 2 Tbsp. baking powder
  • 4 Tbsp. shortening
  • 2 1/2 Tbsp. butter

Mix coconut, 1 ½ c. sugar & vanilla together then set aside.  Combine flour, baking powder, the remaining sugar, butter & shortening.  Add milk & mix into a stiff dough. Grease mould or pudding steamer with butter. Roll out dough & line mould or steamer with it.  Pour in the coconut mixture.  Cover mould or steamer, sealing lid tightly. Place the container into a pot of boiling water. Cook for 1 ½ hours.  Serve warm with sauce.

Hard Sauce:

  • 1/2 box confectioners sugar

  • 1 1/2 Tbsp. vanilla

  • 1/2 lb. butter

  • 1 egg

Beat butter & sugar together for 15 min. Add vanilla & egg & continue to beat until fluffy.
