Coconut Pudding

  • 2 coconuts, grated
  • 1 1/2 c. brown sugar
  • 1 1/2 c. milk
  • 1 tsp. grated lemon rind
  • 1/2 c. butter
  • 3 eggs, beaten
  • 1 tsp. vanilla

Cream butter & sugar.  Add eggs, vanilla, lemon rind, coconut & milk.  Beat vigorously.  Raisins may be added if desired.  Bake at 350 degrees F. for 1 hr.
