Stuffed Spare Ribs

  • 2 matching sections of pork spareribs (approx. 1 1/2 lb. each)
  • Apple Bread Stuffing (below)
  • Pinch of salt
  • Pepper
  • Thyme
  • 1/2 c. water

Place 1 section of ribs, meaty side down, in shallow pan.  Cover with stuffing & top with 2nd section of ribs, meaty side up.  Sprinkle with seasonings, add water to pan & roast in 350 degree F. preheated oven for 1 ½ to 2 hours.  Add a bit more water during cooking if meat is drying out.  Cut between ribs to serve.

Apple Bread Stuffing:
  • 3 Tbsp. butter or margarine
  • 1/2 c. diced celery
  • 1/3 c. chopped onion
  • 1 c. apples, peeled & coarsely shredded or diced
  • 3 c. bread crumbs
  • 2 Tbsp. chopped parsley
  • 1 tsp. salt

Heat butter or margarine in skillet. Add celery & onions, brown lightly. Add remaining ingredients & combine evenly.
