Bahamian Stewed Fish

  • 1 whole fish or several small ones, scaled
  • Oil
  • 2 Tbsp. Flour
  • 1 onion, chopped

Partially fry fish in oil, remove fish.  Brown flour in pan, add onion and enough hot water to make a sauce.  Return fish to pan and simmer gently 5-10 minutes.  Season to taste.
